Gluten is a protein found in wheat, barley and rye. Gluten is used commonly as a thickening agent while preparing such foods as ice cream and ketchup. This protein is highly sensitive and can cause distress in some people known as gluten intolerance.
Gluten intolerance is a condition which affects approximately one percent of American population. This is not an allergic condition, but rather it is an autoimmune disease where in the body considers gluten as a harmful substance. The reaction leads to inflammation of the intestine causing abdominal pain and diarrhea. Even a smallest amount of gluten in the diet can cause adverse reaction in gluten intolerant people. Glucose intolerance can be successfully treated by eliminating gluten intake. Hence, doctors strongly recommend gluten free food for people with celiac disease and gluten allergy.
While wheat and barley are rich in gluten, there are several grains, nuts and vegetables that are gluten free. Corn, chickpeas, rice, beans and legumes are gluten free in their whole form. However, if they are in their processed form such as cereal, bran and flour, one should check whether the food was processed with gluten containing food substances as there is a chance for contamination. Starchy food substances like potato, tapioca, sweet potato and yam are also gluten free.
While purchasing packed food products, one should pay close attention to the ingredients. All foods that are devoid of gluten are usually labeled as “gluten free”. Some of the medicines as well as vitamin supplements also contain gluten. Hence, it is very critical to check the contents before consuming any medicines.
When a person completely depends on gluten free cooking, he/she might get deprived of the nutrients such as iron and folic acid. Gluten free cooking may also reduce the intake of dietary fibers, which are very essential for a healthy body. Hence, doctors recommend multivitamin and mineral and fiber supplement for people who are on gluten free diet.
