While wheat and barley are rich in gluten, there are several grains, nuts and vegetables that are gluten free. Corn, chickpeas, rice, beans and legumes are gluten free in their whole form. However, if they are in their processed form such as cereal, bran and flour, one should check whether the food was processed with gluten containing food substances as there is a chance for contamination. Starchy food substances like potato, tapioca, sweet potato and yam are also gluten free.

While purchasing packed food products, one should pay close attention to the ingredients. All foods that are devoid of gluten are usually labeled as “gluten free”. Some of the medicines as well as vitamin supplements also contain gluten. Hence, it is very critical to check the contents before consuming any medicines.

When a person completely depends on gluten free cooking, he/she might get deprived of the nutrients such as iron and folic acid. Gluten free cooking may also reduce the intake of dietary fibers, which are very essential for a healthy body. Hence, doctors recommend multivitamin and mineral and fiber supplement for people who are on gluten free diet.

Celiac In The Last Few Years

It has really only been in the last few years that Celiac disease has become one of the commonly diagnosed diseases in the country. Many feel that the increase in processed foods have triggered the increase in allergies to gluten, which is generally a harmless, tasteless, and relatively benign ingredient used for preserving foods. Gluten is so commonly used that unless you are actively trying to avoid it you are going to ingest it. The most common foods such as pizza, pasta, bread products, cereal (even kids’ cereals) and certain alcoholic beverages are loaded with gluten. Every time the gluten is ingested you will do further damage.
